Vegan

According to new research by finder.com, approximately 2.9 million people will follow a vegan diet by the end of 2020.

The extremely popular trend towards plant-based diets, especially among young people, make this a genuine need and a great opportunity to attract and retain customers. Only one person in a booking needs to follow a vegan diet and if they are not catered for then they will find alternative places to eat.

Chef’s Seasonal Garden Bowl

Ingredients:

  • Boiled Baby New Potatoes
  • Red Onions
  • Red Radishes
  • Roasted Butternut Squash and Rosemary
  • Rocket Salad
  • Blanched Broccoli Tenderstem
  • Roasted Beetroot
  • Vegan Parsley and Lemon Dressing

Start by slicing the red onion finely. Then combine the vegan lemon mayo and the parsley oil then mix well. (store as company policy, ask Tom) Add all the ingredients into a metal bowl and dress with the dressing. Arrange into a clean white bowl, making sure that some of the salad ingredients are visible.

You can then top this with a vegan item of your choice, our Chef’s Choice is the Sweet Potato Kofta Skewers.

You can then serve this as shown in the image shows.

Plant-Based Burger

Ingredients:

  • Meatless Farm Burger
  • Fried Onions
  • Vegan Chips
  • Texan BBQ Sauce
  • Iceberg lettuce
  • Vegan “cheese” slice
  • Vegan Bun
  • Vegan Mayo

Firstly heat the oil in a pan on medium heat then once hot add the onions and seasonings. Cook the onions until they’re soft, sweet and lightly coloured. You can then coat the chips in oil and spread in a tray, ensure you do not cook these in a deep fat fryer. Cook for the time advised on your packaging. You can then begin to spray the burger in a clean pan and flip every minute until cooked. Next you spread the inside of the toasted bun with mayo and top the base with iceburg lettuce, you could also shred this, add the vegan burger, fried onion and vegan “cheese” slice then melt under the grill for 20 seconds. Lastly add the bun lid and serve as shown in the image below.

Rich Chocolate and Raspberry Torte

Ingredients:

  • Coconut and Raspberry Tort
  • Vegan Ice Cream
  • Icing Sugar
  • Raspberries
  • Raspberry Coulis

Neatly portion onto a plate and serve as the image shows.
